Today we ride inland on a loop ride that visits Polignano a Mare and, for those wanting more riding, adds the grottos at Castellana. Today’s ride is 38, 58 or 69 kms.

Return by bike to La Peschiera to have a treatment at the Spa or hop in the van and head towards Conversano and a look at the atelier of Beppino Campanale, a unique artist from Polignano famous for his modern lamps.

Early this evening join winemaker Elvezia Sbalchiero of the Fusione Winery for a tasting of different wine from the region. Elvezia, from Milan, and Mark Shannon, from California, have made Puglia their home and are using modern winemaking skills to produce some excellent wines using the indigenous grape varieties of Puglia.

Polignano a Mare
In ancient times called Neapolis, Polignano is also famous for its caves. Formed as a result of the action of the waves pounding against the limestone bedrock, some of the caves are extremely deep. The most interesting to visit are the famous Grotta Palazzese, the Grotta Stalattitica and the Grotta della Foca (the Cave of the Seal). Signs of human presence dating back to the Palaeolithic age have been found in these caves.

For a number of years now, the town has been called Castellana-Grotte due to the discovery on January 23rd, 1938 of a vast system of natural underground caves. The Grottos of Castellana represent an important series of natural underground caves in Italy and Europe, not only because of their size but above all for their prodigious wealth of crystalline shapes and forms.
